I’ve always had a sweet tooth but since switching from buying processed treats to making my own I’ve really noticed a difference in my taste bud. I’m always craving that rich, indulgent taste that also doubles up as a healthier alternative. Today’s post is for my beyond scrumptious homemade Bounty Bites, made using the Pura Coconut Blend Range.
If you’re new to using Coconut Oil then this is the perfect place to start. High in Omega 3, it’s versatile and so easy to use, it’s also flavour free so imparts no flavour onto your food and is perfect for all types of cooking! (I’ve not burnt a pan or dish since!) For this recipe, I am using the Pura Liquid Coconut Blend Oil but for the majority of my main meals I use the spray, it makes cooking so easy and mess free!
Ingredients: You will need, 80g of Desiccated Coconut, 45g of Pura Liquid Coconut, 2tbsp of Maple Syrup, 2tbsp of Almond Butter, 1.5tbsp of Vanilla Extract and 5tbsp of Raw Cacao Powder.
Recipe: To make the base of my Bounty Bites mix together 80g of desiccated coconut, 45g of Pura Liquid Coconut, 2tbps of maple syrup and 1.5tbps of vanilla extract. Pop into a tray and flatten. Once flattened pop into your freezer for around 30 minutes or until set. Once the base is ready it’s time to create the topping. Over a low heat mix together the 5tbps of raw cacao powder, 2tbps of almond butter and 45g of Pura Liquid Coconut until smooth. Try not to eat it all and gently spoon over your frozen base. Once the base is covered pop your Bounty Bites back into your Freezer for 30 minutes, until set or until you can’t wait any longer! These bites should last for between 3 to 5 days, if you can resist for that long!
