VEGAN MINT AND CACAO | PROTEIN BALLS RECIPE

So good they certainly shouldn’t be cheaper, tastier and higher in protein than their predecessor but they are! After sharing my ‘10 Healthy Snack Ideas‘ Video with you all, I received so many emails complaining that healthier snacks are always too expensive. With this in mind, I have decided to begin this Blog series with lots of snack-bought-dupe recipes, starting with this Cacao and Mint homemade Protein Ball.

Ingredients: 5 soft pitted Dates, 45g of Almonds, 2 Scoops of Chocolate Protein (I used PHD Women), 2tbsp raw cacao or cocoa powder, 1tsp mint extract and 1/4 cup of cacao nibs.

Recipe: Pop your almonds into a food processor and blend into tiny pieces, then add the pitted dates and your two scoops of protein powder. Once these have been blended together add the mint extract and 1tbsp of water. Keep the blender on if you can and tablespoon by tablespoon, add water until the ingredients come together and form a soft ball. Turn off your processor, grab a bowl and fill with cacao nibs. Roll the mixture in the palms of your hands to create a ball and then roll in your bowl to add a cacao coating. Once rolled devour a couple and then pop in the fridge, these should last up to 5 days (if you can resist!)
