When it comes to cake, I’m always first in line! I have the sweetest of teeth and an appetite that won’t quit. Previously when I wanted to binge on food I would just grab the first thing in the cupboard or raid the vending machine at work, now if I’m craving something sweet, I really test my tastebuds and bake. It may seem silly but normally binges are down to stress, low carbohydrates or boredom, baking takes away the boredom, relaxes my mind and waiting for it to bake really tests my brain to see if I actually need it or if it was just a craving. The best part? You get to have a slice knowing that there are no artificial flavourings and it is so healthy you could even have a slice for breakfast!

Ingredients,
1 1/2 cups Almond Flour,
1 tsp Baking Soda, 1/2 tsp Baking Powder,
1 tsp Cinnamon,
1/4 cup Coconut Oil,
2 large Eggs,
1 tsp Vanilla Extract,
3 Ripe Bananas (peeled and mashed),
1 cup of Chopped Strawberries

Recipe: Preheat your oven to 200’C, line your bread pan with coconut oil and set aside. Whisk together the flour, baking soda, baking powder and cinnamon in a bowl and pop to one side. Next beat the eggs, vanilla and mashed bananas together until creamy, then pop in your dry ingredients and stir until creamy in texture and beige in colour. Finally, pop some of your mixture into your loaf pan, plant your strawberries or any fruit of your choice as a middle layer and then cover with the rest of your mixture. Pop in the oven for about 1 hour (if you can resist the smell) and wait 15 minutes before face planting. Happy baking and don’t forget to tag me in your creations, I’ll try not to lick my screen!
