Sweet Potato is a little lifesaver in our household, jacket potatoes, chips and now as crust, this dish is the perfect feel good warming meal which anyone would enjoy and it’s so easy to make. Pick your favourite fresh herbs and fill it with whatever you desire but here’s my favourite combination.
Ingredients, 3 large sweet potatoes, 2tbs olive oil, 350grams of spinach, two eggs, 1 cup feta cheese, one lemon and a cup of fresh parsley, rosemary and / or chives.
Recipe, Preheat oven to 185’C and peel the sweet potato and chop into thin round circles. Pop potato into frying pan and cook until soft, once cooked cover the base and sides of your pot. Next add 350g of spinach into the same pan and leave to cook until tender, transfer spinach into a sieve to press out any excess water. 
To make the filling whisk two eggs, one cup of feta, lemon and your fresh herbs together until creamy consistency, then add spinach and blend / whisk until smooth. Pour your filling onto the sweet potato and then bake into oven for 40 minutes or until firm and golden.
