BEETROOT BROWNIES | TOO GOOD TO SHARE

The only problem with beetroot brownies is the fact you can’t hide from your friends how many you’ve scoffed, you’ll be caught red handed, literally! I’ve always loved brownies but getting into health and fitness obviously puts a little cross next to delicious treats such as brownies which is why I couldn’t wait to create a healthier alternative and thanks to my gorgeous clients we created the best recipe i’ve found!
Ingredients, Two large beetroots from your garden or 500g cooked beetroot, 3tbs coconut oil, 3 medium sized eggs, 250g coconut or almond flour, 50g of raw cacao powder, 3tbs vanilla essence and 100g of your favourite 70% dark chocolate.
Recipe, Preheat oven to 180’c and grease a medium sized baking tray. Next melt your dark chocolate and pop into a blender with your cooked beetroot, I used my NutriBullet but added a little water to help it blend. Grab a big bowl and add your blended ingredients, next whisk together your 3 eggs, 250g of coconut or almond flour, 50 grams of raw cacao, 3tbs of vanilla essence and 3tbs of coconut oil together until light and airy consistency. Once everything is blended spoon it onto your baking tray and bake for around 25minutes or until you can pop a knife into the centre and pull it out clean.
