HOW TO TURN HEALTHY | INTO DELICIOUS.

 

I remember when a healthy diet mean’t you lived on salad and never ventured out of your own kitchen for food, thankfully that’s no longer the case. Nowadays there’s something on the menu for everyone and what’s even better is it’s just as filling, nutritious and Instagramable than ever before.
Last week I ventured into London with two of my favourite healthy Bloggers Cat and AJ Odudu to see the incredibly talented Saskia aka Naturally Sassy and experience some of her latest creations at her Introduction to Clean Living Event, with a little help from AO.Life. She’s a girl after my own heart, using natural, sugar, dairy and gluten ingredients to create delicious recipes that anyone can create which is why i thought i’d pop her Cheeseless Cheesey Tomato Quesadillas recipe with you so you can try it for yourselves!
Ingredients: gluten free tortilla wraps, 2 plum tomatoes, 1 handful of basil.  To make the Cashew Cheese: 1/2 cup cashews, 1/3 cup water, 1/2 clove of garlic, 1/3 cup nutritional yeast. To make the Guacamole: 1 avocado, 1 lemon juice, 6 cherry tomatoes. Tools, Saskia used this Health Grill but you could also use a frying pan or grill. 
To make: blend the Cashew Cheese ingredients together and spread onto your tortilla wraps, next add tomatoes, basil and any other flavourings you desire and then pop into the grill until toasted like a quesadillas, next make the Guacamole mixture and spread on top once out of the grill OR pop it inside like I did, tasted amazing!
It was wonderful getting to spend time with such likeminded people but what was even better was being able to make and munch so much food, i’ve had so much fun recreating it all since arriving home!
